Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup sliced red bell pepper
Dressing
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey or maple syrup for a vegan option
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded cabbage, shredded carrots, and sliced red bell pepper.
Make the Dressing
  1. In a separate bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the vegetable mixture and toss until all the vegetables are evenly coated. Let it sit for at least 10 minutes before serving to allow the flavors to meld.
