Ingredients

For the Flaky Scone Dough
  • 2.5 cups all-purpose flour spooned and leveled
  • 1/2 cup granulated sugar rubbed with orange zest
  • 2.5 tsp baking powder ensures lofty bakery rise
  • 1/2 tsp fine sea salt
  • 1/2 cup unsalted European butter frozen or very cold, grated or cubed
  • 1 cup sweetened dried ruby cranberries roughly chopped
  • 2 tbsp freshly grated orange zest from 2 large navel oranges
  • 1/2 cup cold heavy whipping cream plus 2 tbsp for brushing tops
  • 1 large egg cold
  • 1.5 tsp pure vanilla extract
For the Sweet Orange Citrus Glaze
  • 1.25 cups powdered sugar (confectioners sugar) sifted
  • 3 tbsp freshly squeezed orange juice adjust for desired thickness
  • 1/2 tsp pure vanilla extract
  • 1/2 tsp fine orange zest for garnish

Method

Prepare Dry Ingredients & Infuse Citrus
  1. Preheat oven to 400°F (205°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine granulated sugar and fresh orange zest. Rub together with your fingertips for 1 minute until fragrant and sugar turns pale orange.
  3. Whisk in the flour, baking powder, and fine sea salt until evenly distributed.
Cut Butter & Form Dough
  1. Add the cold grated butter (or small cold cubes) to the dry mixture. Cut butter in with a pastry cutter or your fingertips until coarse, pea-sized crumbs form.
  2. Stir in the chopped dried cranberries.
  3. In a measuring cup, whisk together cold heavy cream, egg, and vanilla extract. Pour into the flour mixture and stir gently with a fork until dough just begins to clump together. Do not overwork.
Shape, Cut & Bake
  1. Turn dough out onto a lightly floured surface. Gently pat into an 8-inch round disc about 1-inch thick.
  2. Using a sharp bench scraper or chef knife, cut the disc into 8 equal triangle wedges. Transfer wedges to the prepared baking sheet, leaving 2 inches between each scone.
  3. Brush tops lightly with 2 tablespoons heavy cream and sprinkle with coarse sparkling sugar if desired.
  4. Bake for 16 to 18 minutes until puffed and golden brown along the edges. Cool on the sheet for 10 minutes, then transfer to a wire cooling rack.
Glaze & Serve
  1. In a medium bowl, whisk sifted powdered sugar with fresh orange juice and vanilla until a smooth, opaque ribbon forms.
  2. Generously drizzle glaze over warm scones, allowing it to set for 5 minutes before serving.
