Ingredients
  

Bell Peppers
  • 4 pieces bell peppers any color
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 can black beans drained and rinsed
  • 1 cup salsa your favorite variety
  • 1 cup sour cream for serving
  • 1 cup jalapeños sliced, optional
  • 1 cup guacamole for serving

Method
 

Prepare the Bell Peppers
  1. Preheat the oven to 400°F (200°C). Slice the bell peppers in half lengthwise and remove the seeds.
Assemble the Nachos
  1. Place the bell pepper halves on a baking sheet, cut side up. Layer the black beans and shredded cheese on top of each half.
Bake
  1. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and top with salsa, jalapeños, sour cream, and guacamole. Serve warm.
