Ingredients
  

Crust
  • 1 cup Graham cracker crumbs
  • 1/2 cup Unsalted butter melted
  • 1/4 cup Granulated sugar
Cheesecake Filling
  • 16 oz Cream cheese softened
  • 1/2 cup Sour cream
  • 1/2 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 3 Eggs
  • 2 cups Fresh blueberries
  • 1 tbsp Lemon juice
  • 1 tbsp Cornstarch
Crumble Topping
  • 1 cup Oats
  • 1/2 cup Brown sugar
  • 1/2 cup All-purpose flour
  • 1 tsp Cinnamon
  • 1/4 cup Unsalted butter additional, softened

Method
 

Preparing the Cheesecake
  1. Preheat the oven to 325°F.
  2. In a mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Press into the bottom of a springform pan to form the crust.
  3. In another bowl, beat together the cream cheese and sour cream until smooth. Add the granulated sugar and vanilla extract, and mix well.
  4. Add eggs one at a time, mixing just until combined after each addition.
  5. Gently fold in the fresh blueberries, lemon juice, and cornstarch.
  6. Pour the cheesecake filling over the prepared crust in the springform pan.
Making the Crumble
  1. In a separate bowl, mix together the oats, brown sugar, all-purpose flour, cinnamon, and additional unsalted butter until crumbly.
  2. Sprinkle the oat crumble over the cheesecake filling.
Baking the Cheesecake
  1. Bake for 50 minutes or until the center is set (not jiggly).
  2. Allow to cool before serving.
