Ingredients
  

Salad Base
  • 2 cans canned chicken drained and shredded
  • 1 cup celery diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup mayonnaise adjust to taste
  • 1 tablespoon Dijon mustard optional
  • 1 teaspoon lemon juice freshly squeezed
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Optional Add-ins
  • 1/4 cup dried cranberries for sweetness
  • 1/4 cup chopped walnuts for crunch
  • 1/4 cup grapes halved

Method
 

Prepare the Ingredients
  1. In a mixing bowl, combine the drained and shredded canned chicken, diced celery, and chopped red onion.
Mix the Dressing
  1. In a separate small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
Combine Everything
  1. Pour the dressing over the chicken mixture and stir until well combined. Add any optional add-ins if desired.
Serve
  1. Serve immediately on a bed of greens, in a sandwich, or with crackers.
