Salad Ingredients
  • 4 medium carrots peeled and cut into ribbons
  • 1 cup cucumber thinly sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped
  • 1 tablespoon sesame seeds toasted
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. Using a vegetable peeler, slice the carrots into long ribbons and place them in a mixing bowl.
  2. Add the sliced cucumber, chopped parsley, and chopped mint to the bowl.
  3. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, salt, and black pepper to make the dressing.
  4. Pour the dressing over the salad ingredients and toss gently to combine.
  5. Sprinkle the toasted sesame seeds on top before serving.
