Ingredients
  

  • 4 large russet potatoes
  • 2 cups shredded cheddar cheese
  • 1 cup cooked bacon bits
  • 1 cup sour cream
  • 1/4 cup chopped green onions

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and pierce russet potatoes several times with a fork. Bake directly on the oven rack or on a baking sheet for 45-60 minutes until tender.
  3. Once cooled slightly, cut each potato in half lengthwise and scoop out some flesh, leaving a quarter-inch border.
  4. Sprinkle salt inside each potato skin. Fill generously with cheese and bacon bits. Return to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
  5. Top with sour cream and chopped green onions before serving.
