  • 2 large eggs, room temperature
  • 1/2 cup unsalted butter, softened

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  2. Toss the sliced cherries in a spoonful of flour to prevent them from sinking during baking.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. In another bowl, cream the sugar and softened butter until light and fluffy. Add the eggs one at a time, followed by sour cream; mix until well combined.
  5. Gradually add the dry mixture to the wet ingredients until just incorporated. Gently fold in the floured cherries.
  6. Pour the batter into the prepared pan and smooth the surface. Bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
