Ingredients
  

Chicken
  • 1 pound boneless, skinless chicken breasts grilled and sliced
Taco Fillings
  • 8 small corn tortillas warmed
  • 2 cups romaine lettuce chopped
  • 1/2 cup Caesar dressing store-bought or homemade
  • 1/4 cup Parmesan cheese shredded
  • 1/4 cup croutons optional, for crunch

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Remove from grill and let rest before slicing.
Assemble the Tacos
  1. In a mixing bowl, combine the chopped romaine lettuce with Caesar dressing and toss to coat evenly.
  2. Place a few slices of grilled chicken on each warmed tortilla.
  3. Top with the dressed romaine lettuce and sprinkle with Parmesan cheese and croutons if desired.
  4. Fold the tortillas and serve immediately on a platter.
