Pudding Base
  • 1 cup coconut milk full-fat for creaminess
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey for sweetness
  • 1 teaspoon vanilla extract
Toppings
  • 1/2 cup fresh berries such as strawberries, blueberries, or raspberries
  • 2 tablespoons toasted coconut flakes optional

Method
 

Prepare the Pudding
  1. In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract until well combined.
  2. Cover the bowl and refrigerate for at least 4 hours or overnight until the mixture thickens.
Serve
  1. Once the pudding is set, stir well and divide into serving bowls.
  2. Top with fresh berries and toasted coconut flakes before serving.
