Ingredients

For the Rich Tomato Soup Base
  • 2 tbsp extra-virgin olive oil or unsalted butter
  • 1 small yellow onion finely diced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste concentrated rich umami foundation
  • 1 can (28 oz / 800g) crushed San Marzano tomatoes or whole peeled crushed by hand
  • 3 cups (720ml) vegetable broth or low-sodium chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes optional for gentle warmth
  • 1/2 tsp fine sea salt plus more to taste
  • 1/4 tsp freshly cracked black pepper
For the Pasta & Creamy Finish
  • 10 oz (280g) refrigerated three-cheese tortellini fresh pasta cooks in 3-4 mins
  • 1/2 cup (120ml) heavy whipping cream or half-and-half for lighter broth
  • 1/2 cup (50g) Parmigiano-Reggiano freshly grated, plus extra for serving
  • 1/2 cup fresh sweet basil leaves chiffonade ribbons, plus small leaves for garnish

Method

Build the Aromatic Tomato Base
  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add finely diced onion and sauté for 4 to 5 minutes until soft and translucent.
  2. Add minced garlic and tomato paste. Cook, stirring constantly, for 1 to 2 minutes until fragrant and the tomato paste turns deep brick red.
  3. Pour in crushed San Marzano tomatoes, broth, dried oregano, red pepper flakes, salt, and black pepper. Stir well and bring to a gentle rolling boil over medium-high heat, then lower heat and simmer uncovered for 8 to 10 minutes to deepen flavors.
Cook Tortellini and Add Cream
  1. Add refrigerated cheese tortellini directly into the simmering soup broth. Cook for 3 to 4 minutes (or per package instructions) until the tortellini float to the top and are tender al dente.
  2. Remove pot from heat to prevent curdling. Stir in heavy cream, freshly grated Parmigiano-Reggiano, and sliced fresh basil ribbons until cheese melts into a silky, velvety soup.
  3. Ladle into warm bowls. Garnish with additional freshly shaved parmesan, cracked black pepper, fresh basil leaves, and serve immediately with warm crusty garlic bread.
