  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 3 cups baby spinach
  • 4 cloves garlic, minced

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt to taste

Method
 

Cooking Steps
  1. Prepare your ingredients: Chop sun-dried tomatoes and mince garlic. Preheat the oven to 400°F (200°C) if baking.
  2. In a skillet over medium-high heat, add olive oil. Season salmon with salt and pepper; place skin-side down and sear for about 4-5 minutes until golden brown.
  3. Remove salmon; add garlic and sun-dried tomatoes in the skillet. Sauté until fragrant (about one minute). Add heavy cream, stirring well.
  4. Reduce heat to low; mix in spinach until wilted, then stir in Parmesan until melted.
  5. Return salmon to skillet, spooning sauce over fillets. Simmer together for a few minutes until heated through.
  6. Plate your creamy salmon masterpiece and drizzle with extra sauce from the skillet.
