Ingredients
  

  • 2 fillets salmon 6 oz each
  • 1/2 cup BBQ sauce
  • 1 large peach sliced
  • 2 jalapeños sliced
  • 1/4 cup fresh cilantro chopped
  • 1 cup cooked brown rice or quinoa
  • 1 lime juiced
  • 2 tsp olive oil
  • salt to taste
  • pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sliced peaches and jalapeños in olive oil, salt, and pepper. Spread them on the baking sheet.
  3. Brush BBQ sauce mixed with lime juice over both sides of the salmon fillets.
  4. Place the salmon fillets on the same baking sheet as the veggies and bake for 15-20 minutes until everything is tender.
  5. Assemble bowls: start with a base of brown rice or quinoa, top with crispy salmon, roasted peaches, and jalapeños.
  6. Garnish with cilantro and an extra squeeze of lime juice before serving.
