  • 3 tbsp olive oil
  • 1 whole lemon (juice and zest)
  • 2 tbsp fresh dill, chopped
  • 1 cup whole milk ricotta cheese
  • salt to taste
  • pepper to taste
  • ½ tsp garlic powder

Method
 

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  3. Spread the potatoes on the lined baking sheet in a single layer. Roast for 25-30 minutes or until golden brown and crispy.
  4. While the potatoes roast, prepare the dill whipped ricotta by mixing ricotta cheese, chopped dill, lemon zest, salt, and pepper in a bowl until smooth.
  5. Once the potatoes are crispy, serve them hot alongside dollops of dill whipped ricotta for dipping.
