  • 2 tbsp Butter
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Flour
  • 4 cups Vegetable or Chicken Broth low-sodium recommended
  • 1 cup Heavy Cream or half-and-half for a lighter version
  • 1 tsp Thyme fresh or dried
  • Salt to taste
  • Pepper to taste

Method
 

  1. Sauté the onions and garlic in butter until softened.
  2. Add the mushrooms and cook until they release their moisture.
  3. Stir in the flour and cook for a minute.

  5. Bring the mixture to a simmer and cook until slightly thickened.
  6. Stir in the heavy cream and thyme, then season with salt and pepper to taste.
  7. Cook for an additional 5 minutes until heated through.
