Preparation
  1. Gather all ingredients. If using fresh corn, husk and cut the kernels; if using frozen, measure what you need.
  2. In a large bowl, mix softened cream cheese, sour cream, and mayonnaise until creamy.
  3. Add lime juice, chili powder, salt, and pepper; mix well.
  4. Gently fold in the corn until evenly coated.
  5. Spread mixture into a baking dish and top with Cotija cheese.
  6. Bake at 350°F (175°C) for 20-25 minutes until bubbly and golden brown.
