Ingredients
  

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) black beans rinsed
  • 1 cup frozen corn
  • 1 cup diced bell peppers red/green
  • 1/2 cup chopped green onions
  • 4 large flour tortillas
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • cooking spray for baking
  • 1/2 cup sour cream
  • 1/4 cup salsa

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat oil over medium heat. Add shredded chicken and cook until heated through. Stir in black beans, corn, bell peppers, and spices; mix well.
  3. Lay out tortillas and spoon about two tablespoons of filling onto each. Roll tightly and place seam-side down on a parchment-lined baking sheet.
  4. Spray lightly with cooking oil and bake for about 20 minutes or until golden brown.
  5. While baking, mix sour cream and salsa for the dipping sauce.
  6. Serve warm with extra salsa if desired.
