  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • cream cheese frosting for topping

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
  3. In another bowl, combine vegetable oil, eggs, buttermilk, red food coloring, and vanilla extract until smooth.
  4. Gradually mix the wet ingredients into the dry mixture until just combined; avoid overmixing.
  5. Fill each cupcake liner two-thirds full with batter and bake for 20-22 minutes or until a toothpick comes out clean.
  6. Allow cupcakes to cool completely before frosting with cream cheese frosting.
