Ingredients
  

  • 6 large eggs
  • 1 cup fresh spinach or ½ cup frozen, thawed and drained
  • 1 cup cherry tomatoes halved
  • ½ cup crumbled feta cheese
  • 1 cup bell peppers chopped
  • ½ cup onions chopped
  • 2 tbsp olive oil

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
  3. Stir in spinach and tomatoes; cook until spinach wilts, about 2 minutes.
  4. In a bowl, whisk eggs with salt and pepper. Pour over the veggie mixture.
  5. Sprinkle feta on top and let cook on medium heat until edges set, about 5 minutes.
  6. Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden. Cool slightly before slicing.
