- Preheat the oven to 425°F (220°C).
- Peel and slice the russet potatoes into 1-inch thick rounds.
- In a skillet over medium heat, melt the butter until bubbly. Add potato slices and season with salt and pepper; sear for about 4 minutes on each side until golden brown.
- Stir in minced garlic and chopped thyme; cook for an additional minute.
- Pour in vegetable broth until it reaches halfway up the sides of the potatoes, then transfer everything to an oven-safe dish.
- Cover with foil and bake for 25-30 minutes or until tender. Remove foil during the last 5 minutes for extra crispiness.
