Cooking Steps
  1. Preheat the oven to 425°F (220°C).
  2. Peel and slice the russet potatoes into 1-inch thick rounds.
  3. In a skillet over medium heat, melt the butter until bubbly. Add potato slices and season with salt and pepper; sear for about 4 minutes on each side until golden brown.
  4. Stir in minced garlic and chopped thyme; cook for an additional minute.
  5. Pour in vegetable broth until it reaches halfway up the sides of the potatoes, then transfer everything to an oven-safe dish.
  6. Cover with foil and bake for 25-30 minutes or until tender. Remove foil during the last 5 minutes for extra crispiness.
