Elote, or Mexican street corn, is a delicious grilled corn on the cob coated with a creamy mixture of mayonnaise, cheese, chili powder, and lime.

Ingredients
  

Corn
  • 4 ears corn on the cob husked
Toppings
  • 1/2 cup mayonnaise
  • 1/2 cup cotija cheese crumbled
  • 1 tablespoon chili powder adjust to taste
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon salt to taste

Method
 

Grill the Corn
  1. Preheat the grill to medium-high heat. Place the corn on the grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and cooked through.
Prepare the Topping
  1. In a bowl, mix together the mayonnaise, cotija cheese, chili powder, lime juice, and salt until well combined.
Assemble the Elote
  1. Once the corn is grilled, remove it from the grill and brush the mayonnaise mixture generously over each ear of corn. Sprinkle with additional cotija cheese and chili powder if desired.
