  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, finely chopped
  • 1 tbsp oyster sauce (or vegetarian substitute)
  • 1 tsp garlic powder

Method
 

  1. Gather all ingredients and chop the vegetables; beat the eggs in a bowl.
  2. Heat oil in a large skillet or wok over medium-high heat; scramble the eggs until set but soft.
  3. Add chopped vegetables and stir-fry for about 3 minutes until tender-crisp.
  4. Introduce cooked rice to the skillet, breaking up clumps; pour in soy sauce and sesame oil, tossing until combined.
  5. Add garlic powder and oyster sauce; mix well for another minute.
  6. Garnish with chopped green onions before serving.
