Ingredients
  

  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tsp dried oregano
  • 2 tbsp lemon juice, fresh
  • 1/2 cup feta cheese, crumbled optional
  • 2 tbsp extra virgin olive oil
  • 2 tbsp low-sodium soy sauce

Method
 

  1. Heat olive oil in a large skillet over medium heat. Sauté diced bell peppers and red onion until soft, about 5 minutes.
  2. Add ground turkey to the skillet. Cook until browned, breaking it apart as it cooks, about 8 minutes.
  3. Stir in minced garlic, oregano, and soy sauce. Cook for another 2 minutes until fragrant.
  4. Drizzle fresh lemon juice over the mixture and stir to combine; cook for an additional minute.
  5. Serve by spooning cooked rice into bowls and topping with the turkey mixture. Sprinkle crumbled feta cheese on top if desired.
