Ingredients
  

  • 1 pound lean ground turkey
  • 2 cups cooked jasmine or brown rice
  • 1 cup broccoli florets fresh or frozen
  • 1 cup carrots thinly sliced or julienned
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Method
 

  1. Cook rice according to package instructions.
  2. In a skillet over medium heat, sauté broccoli and carrots in a splash of oil until tender, about 5 minutes.

  4. Whisk together soy sauce, brown sugar, and garlic powder in a small bowl. Pour over the turkey mixture and stir to combine. Simmer for an additional 3 minutes.
  5. Serve turkey mix over rice, drizzling with any remaining sauce.
