Ingredients
  

Rice
  • 3 cups cooked rice preferably day-old
Vegetables
  • 1 cup peas and carrots frozen or fresh
  • 1 cup green onions sliced
  • 1 cup mushrooms sliced
Eggs
  • 2 large eggs beaten
Sauce
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

Method
 

Cooking the Rice
  1. Heat the wok over medium-high heat and add sesame oil.
  2. Add the peas, carrots, and mushrooms, and stir-fry for 2-3 minutes until tender.
  3. Push the vegetables to the side and pour the beaten eggs into the wok. Scramble until fully cooked.
  4. Add the cooked rice to the wok and mix everything together.
  5. Pour the soy sauce over the rice and season with garlic powder and black pepper. Stir well to combine.
  6. Add the sliced green onions and stir-fry for an additional 2 minutes.

Notes

For best results, use day-old rice as it helps to prevent the fried rice from becoming mushy.
