Ingredients
  

  • 4 fillets salmon 6 oz each
  • 1/4 cup raw honey
  • 1/4 cup sriracha sauce
  • 2 cloves garlic minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 2 cups jasmine or brown rice uncooked
  • 2 cups assorted vegetables (broccoli, bell peppers)

Method
 

  1. Preheat grill to medium-high heat or oven to 400°F (200°C). Line a baking sheet with parchment paper if using the oven.
  2. In a bowl, whisk together honey, sriracha, minced garlic, soy sauce, and lime juice.
  3. Marinate salmon fillets in half of the marinade for at least 15 minutes.
  4. Cook rice according to package instructions while salmon marinates.
  5. Grill or bake salmon for 12-15 minutes until cooked through, brushing with remaining marinade halfway.
  6. Serve salmon over rice with assorted veggies arranged around it.

Notes

Feel free to customize the recipe by swapping salmon with chicken or tofu and using your favorite vegetables. Leftovers can be stored in an airtight container in the fridge for up to three days.
