Brownie Layer
  • 1/2 cup unsalted butter
  • 8 ounces semi-sweet chocolate, coarsely chopped
  • 1 and 1/4 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon salt
Cheesecake Layer
  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/4 teaspoon peppermint extract
  • 2 drops liquid or gel green food coloring
  • 2/3 cup mini chocolate chips

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and prepare the baking dish by greasing it.
  2. Melt the butter and semi-sweet chocolate together until smooth.
  3. Stir in the granulated sugar, then add the eggs one at a time, mixing well.
  4. Mix in vanilla extract, flour, and salt until completely combined.
  5. Spread half of the brownie mixture in the prepared dish.
  6. In a separate bowl, beat the cream cheese with 1/4 cup of granulated sugar, egg yolk, peppermint extract, and food coloring until smooth.
  7. Spread the cream cheese mixture over the brownie layer.
  8. Drop spoonfuls of the remaining brownie mixture on top and swirl with a knife.
  9. Sprinkle mini chocolate chips on top for added texture.
  10. Bake in the preheated oven for 35 minutes or until set.
  11. Allow to cool completely before cutting into squares.
