Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 0.5 cups unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Method
 

Baking Instructions
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, blend vegetable oil, sugar, eggs, buttermilk, vanilla extract, and red food coloring until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cupcakes cool completely on a wire rack before frosting with cream cheese frosting.
