Pie Crust
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 5 tbsp cold water
Filling
  • 2 cups whole milk ricotta cheese
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 unit zest of 1 lemon
  • 1/4 cup toasted pine nuts

Method
 

Preparation and Baking
  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, salt, and sugar. Cut in butter until crumbly. Gradually add cold water until dough forms. Chill for 30 minutes.
  3. In another bowl, whisk together ricotta cheese, sugar, eggs, lemon zest, and vanilla until smooth.
  4. Roll out chilled dough on a floured surface to fit a pie dish and transfer it into the dish.
  5. Pour filling into the crust and sprinkle with toasted pine nuts.
  6. Bake for 45-50 minutes until golden brown. Let cool before serving.

Notes
