Ingredients
  

  • 3-4 breasts boneless, skinless chicken about 1 lb
  • 4 cloves fresh garlic minced
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1/2 cup sliced green onions for topping
  • 2 tbsp toasted sesame seeds for topping
  • 2 cups steamed broccoli or spinach for topping
  • 3 cups cooked rice white or brown

Method
 

  1. Slice chicken breasts into bite-sized pieces. In a bowl, mix soy sauce, brown sugar, garlic, sesame oil, and rice vinegar. Add chicken and marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat with a splash of oil. Add marinated chicken and cook for 5-7 minutes until golden brown and cooked through.
  3. Steam or sauté broccoli or spinach until tender yet vibrant.
  4. Layer cooked rice in bowls, top with chicken and veggies.
  5. Sprinkle green onions and sesame seeds on top before serving.
  6. Enjoy immediately or drizzle extra marinade over each bowl for added flavor.
