  • 1 cup buttermilk
  • 1 tablespoon lemon zest

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice for glaze
  • 1 teaspoon lemon zest for glaze

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a bundt pan.

  5. Mix in the buttermilk, lemon zest, lemon juice, and vanilla extract until combined.

  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Pour the batter into the prepared bundt pan and smooth the top.
  9. Bake in the preheated oven for 50 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  11. For the glaze, whisk together powdered sugar, lemon juice, and lemon zest until smooth; drizzle over the cooled cake.
