  • 1.5 cups all-purpose flour
  • 1 cups granulated sugar
  • 0.5 cups unsalted butter softened
  • 2 large eggs
  • 0.5 cups buttermilk
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cups fresh raspberries lightly mashed
Frosting
  • 0.5 cups unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon milk optional for consistency

Method
 

Cupcake Preparation
  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk, lemon zest, and lemon juice until well combined.
  5. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the lightly mashed raspberries.
  8. Divide the batter evenly among the cupcake liners.
  9. Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
  10. Let the cupcakes cool completely before frosting.
Frosting Preparation
  1. For the frosting, cream the softened butter and powdered sugar together.
  2. Add lemon juice and zest to the frosting, mixing until smooth.
  3. If needed, add milk for consistency.
  4. Frost the cooled cupcakes and serve.
