Ingredients
  

Tacos
  • 1 lb Ground Beef or chicken
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 8 small Corn Tortillas
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheese Cheddar or Mexican blend
  • 1 cup Sour Cream
Enchiladas
  • 2 cups Shredded Chicken
  • 1 cup Enchilada Sauce
  • 8 large Flour Tortillas
  • 1 cup Shredded Cheese for topping
  • 1 cup Chopped Onions
Guacamole
  • 3 medium Avocados ripe
  • 1 medium Lime juiced
  • 1 tsp Salt
  • 1 medium Tomato diced
  • 1 small Onion finely chopped
  • 1 tsp Cilantro chopped
Salsa
  • 4 medium Tomatoes diced
  • 1 small Onion finely chopped
  • 1 jalapeño Jalapeño seeded and minced
  • 1 tsp Lime Juice
  • 1 tsp Salt
  • 1 tbsp Cilantro chopped

Method
 

Tacos
  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add chili powder and cumin, stirring to combine. Cook for an additional 5 minutes.
  3. Warm the corn tortillas in a separate skillet or microwave.
  4. Assemble tacos by adding beef, lettuce, tomatoes, cheese, and sour cream to each tortilla.
Enchiladas
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine shredded chicken with enchilada sauce.
  3. Fill each tortilla with the chicken mixture, roll them up, and place in a baking dish.
  4. Top with remaining enchilada sauce and shredded cheese.
  5. Bake for 20-25 minutes until cheese is melted and bubbly.
Guacamole
  1. In a bowl, mash the avocados with lime juice and salt.
  2. Stir in diced tomato, onion, and cilantro until well combined.
  3. Serve immediately with tortilla chips.
Salsa
  1. In a bowl, combine diced tomatoes, onion, jalapeño, lime juice, salt, and cilantro.
  2. Mix well and let sit for 15 minutes to allow flavors to meld.
  3. Serve with tortilla chips or as a topping for tacos and enchiladas.
