Ingredients
  

Salad Base
  • 4 ears corn on the cob grilled and kernels removed
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
Toppings
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon lime zest

Method
 

Prepare the Corn
  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally until charred. Remove from grill and let cool.
Make the Salad
  1. In a large mixing bowl, combine the grilled corn kernels, cherry tomatoes, cucumber, red onion, and cilantro.
Prepare the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the salad mixture and toss until evenly coated. Top with crumbled feta cheese and lime zest before serving.
