Ingredients

For the Brioche & Rich Spiced Pumpkin Custard
  • 1 lb day-old brioche or challah bread cut into 1-inch cubes (about 8-9 cups)
  • 1 cup pure canned pumpkin puree not pumpkin pie mix
  • 8 large eggs room temperature
  • 1.5 cups whole milk
  • 1/2 cup heavy whipping cream adds luxurious bakery richness
  • 1/3 cup pure maple syrup or packed brown sugar
  • 1 tbsp pure vanilla extract
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg and cloves freshly grated preferred
  • 1/4 tsp fine sea salt
For the Crunchy Brown Sugar Pecan Streusel
  • 1/2 cup chopped raw pecans or walnuts
  • 1/3 cup packed dark brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 3 tbsp cold unsalted butter cubed into small pea-sized pieces

Method

Assemble Brioche & Pumpkin Custard
  1. Grease a 9x13-inch ceramic or glass baking dish with butter. Spread the cubed brioche bread evenly across the dish in an uncompacted layer.
  2. In a large mixing bowl, whisk together pumpkin puree, eggs, whole milk, heavy cream, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt until smooth and uniform.
  3. Pour the spiced custard evenly over all the bread cubes. Press down gently with a spatula so every piece absorbs the liquid. Cover tightly with plastic wrap and refrigerate overnight (or at least 4 hours).
Prepare Crunchy Streusel
  1. In a small bowl, combine chopped pecans, dark brown sugar, flour, and cinnamon. Cut in the cold cubed butter using a pastry cutter or your fingertips until crumbly and coarse.
Bake to Golden Perfection
  1. Remove the casserole from the refrigerator 20 minutes before baking to take the chill off. Preheat oven to 350°F (175°C).
  2. Uncover the dish and scatter the pecan streusel evenly over the top.
  3. Bake for 45 to 50 minutes until the casserole is puffed, the center is set (a knife inserted comes out clean), and the top streusel is golden brown and caramelized.
Rest, Slice & Serve
  1. Let casserole rest for 10 minutes to allow the custard to settle.
  2. Slice into generous squares and serve warm with a drizzle of pure maple syrup, a dollop of whipped cream, and extra toasted pecans.
