Cooking the Picadillo
- In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
- Add the diced onion, green bell pepper, and minced garlic. Sauté until vegetables are tender.
- Stir in the diced tomatoes, potatoes, olives, cumin, oregano, paprika, bay leaf, salt, and black pepper.
- Pour in the beef broth and vinegar. Bring to a simmer, cover, and cook for 20-25 minutes until potatoes are tender.
- Remove the bay leaf before serving. Adjust seasoning if necessary.
