Ingredients
  

Cake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups chopped rhubarb fresh or frozen
Topping
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon

Method
 

Prepare the Oven and Pan
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
Make the Batter
  1. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped rhubarb gently.
Bake the Cake
  1. Pour the batter into the prepared cake pan.
  2. In a small bowl, mix together the topping ingredients and sprinkle over the batter.
  3. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Cool and Serve
  1. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  2. Slice and serve as desired.
