  • 4 cups chopped rhubarb fresh
  • 1 cup onion finely chopped
  • 1 cup brown sugar packed
  • 1 cup apple cider vinegar
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1 cup raisins optional

Method
 

Cooking Instructions
  1. In a saucepan, combine chopped rhubarb, onion, brown sugar, and apple cider vinegar.
  2. Add grated ginger, cinnamon, allspice, and salt to the mixture.
  3. Bring the mixture to a boil over medium heat, stirring frequently.
  4. Reduce heat and let it simmer for about 30 minutes, or until the rhubarb is soft and the chutney thickens.
  5. If using, stir in raisins and cook for an additional 5 minutes.
  6. Remove from heat and let cool before transferring to a jar for storage.
