Chicken and Cauliflower
  • 4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 1 head fresh cauliflower cut into florets (approximately 4 cups)
  • 2 tbsp extra virgin olive oil
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic minced
  • 1/2 tsp black pepper
  • 1/4 cup brown sugar

Method
 

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a bowl, combine honey, soy sauce, minced garlic, brown sugar, and black pepper to create the marinade. Reserve half of the marinade for glazing later.
  3. Place cauliflower florets on one side of the prepared baking sheet and drizzle with olive oil; season with salt and pepper.
  4. Coat chicken breasts in the remaining marinade and arrange them on the other side of the baking sheet alongside the cauliflower.
  5. Bake for about 25-30 minutes until the chicken reaches an internal temperature of 165°F and the cauliflower is tender. Brush with reserved marinade halfway through cooking for extra flavor.
  6. Serve hot, drizzling any remaining pan sauce over the top.
