Ingredients

Sheet Pan Roasted Aromatics
  • 1 large fresh butternut squash (about 3 lbs) halved lengthwise and seeded (no peeling required)
  • 1 large Honeycrisp or Granny Smith apple halved and cored
  • 1 medium yellow onion peeled and quartered
  • 1 whole head of fresh garlic top 1/4 inch sliced off to expose cloves
  • 2 tbsp extra virgin olive oil for brushing vegetables before roasting
  • 1 tsp coarse kosher salt plus more to taste
  • 1/2 tsp freshly cracked black pepper
Warm Broth, Cream & Fresh Herbs
  • 3.5 cups low-sodium vegetable broth or chicken bone broth warm
  • 6 leaves fresh sage whole
  • 1/4 tsp freshly grated whole nutmeg essential autumn warmth
  • 1/2 cup heavy whipping cream or full-fat canned coconut milk for vegan option
  • 1 tbsp pure maple syrup enhances natural caramelized sugars
Artisan Garnishes
  • 3 tbsp toasted pepitas (pumpkin seeds) for crunchy contrast
  • 8 leaves fresh sage leaves crisped in 1 tbsp foaming butter for 30 seconds

Method

Roast Vegetables on Sheet Pan
  1. Preheat oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper.
  2. Brush cut surfaces of halved squash, cored apple halves, quartered onion, and exposed garlic head with olive oil; season with kosher salt and black pepper.
  3. Place squash and apple cut-side down on the sheet pan. Wrap garlic loosely in foil. Roast for 40 to 45 minutes until the squash flesh is deeply golden-caramelized and fork-tender.
Scoop & Simmer with Broth
  1. Allow vegetables to cool for 5 minutes. Use a large spoon to scoop tender caramelized squash flesh directly out of the skins into a Dutch oven or large soup pot.
  2. Add roasted apple halves, roasted onion, and squeeze the sweet roasted garlic cloves out of their paper skins into the pot.
  3. Pour in warm vegetable broth, fresh sage leaves, and freshly grated nutmeg. Bring to a gentle simmer over medium heat for 5 minutes.
Blend Until Luxuriously Silky
  1. Remove pot from heat (discard sage leaves if you prefer milder herbal note, or leave in for robust flavor).
  2. Using an immersion hand blender directly in the pot (or working in batches in a high-speed countertop blender), puree for 60 to 90 seconds until completely silky, glossy, and lump-free.
Swirl Cream & Garnish
  1. Stir in heavy cream and pure maple syrup over low heat until gently warmed through (do not boil once cream is added). Taste and adjust seasoning with salt and pepper as needed.
  2. Ladle steaming soup into warm stoneware bowls. Drizzle with an extra swirl of cream, scatter toasted crunchy pepitas, and crown with crispy pan-fried sage leaves.
