Ingredients
  

Bread
  • 8 slices whole grain bread or your choice of bread
Smoked Salmon
  • 8 oz smoked salmon thinly sliced
Cream Cheese
  • 8 oz cream cheese softened
Vegetables
  • 1 cup arugula or spinach
  • 1 medium cucumber thinly sliced
  • 1 medium tomato sliced
Condiments
  • 1 tbsp capers optional
  • 1 tbsp dill fresh or dried
  • 1 tbsp lemon juice freshly squeezed

Method
 

Assemble the Sandwich
  1. Spread a generous layer of cream cheese on each slice of bread.
  2. Layer smoked salmon on four of the slices.
  3. Top with arugula, cucumber, and tomato slices.
  4. Sprinkle with capers, dill, and lemon juice, if using.
  5. Top with the remaining slices of bread to form sandwiches.
  6. Cut sandwiches in half and serve immediately.
