Ingredients
  

Filling
  • 2 cups strawberries sliced
  • 2 cups rhubarb chopped
  • 1 cup sugar adjust based on sweetness preference
  • 2 tablespoons cornstarch for thickening
  • 1 teaspoon vanilla extract
Topping
  • 1 cup oats rolled
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine strawberries, rhubarb, sugar, cornstarch, and vanilla extract. Mix well and set aside.
Prepare the Topping
  1. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
Assemble and Bake
  1. Pour the fruit mixture into a baking dish and spread evenly.
  2. Sprinkle the oat topping over the fruit mixture.
  3. Bake in the preheated oven for 30 minutes or until the topping is golden brown and the filling is bubbly.
Serve
  1. Let cool for a few minutes before serving. Enjoy warm, optionally with ice cream.
