  • 4 ears corn on the cob Husked
Toppings
  • 1/2 cup mayonnaise Can substitute with sour cream
  • 1/2 cup cotija cheese Crumbled
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice Freshly squeezed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh cilantro Chopped, for garnish

Method
 

Grilling the Corn
  1. Preheat the grill to medium-high heat.
  2. Place the husked corn on the grill and cook for about 10-15 minutes, turning occasionally, until charred and tender.
Preparing the Toppings
  1. In a bowl, mix together mayonnaise, lime juice, chili powder, garlic powder, salt, and black pepper until well combined.
  2. Once the corn is grilled, remove it from the grill and brush the mayonnaise mixture generously over each ear of corn.
  3. Sprinkle crumbled cotija cheese on top of the coated corn.
  4. Garnish with chopped cilantro before serving.
