Method
Prepare the Potatoes
- Preheat the oven to 375°F (190°C). Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
Cook the Meat Mixture
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add taco seasoning, black beans, corn, and salsa to the skillet. Stir and cook for another 5 minutes.
Assemble the Bake
- In a large mixing bowl, combine the cooked potatoes with the meat mixture. Stir until well combined.
- Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese.
Bake
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve
- Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with chopped green onions.
