Taco Potatoes Bake

Ingredients
  

Potatoes
  • 4 medium Russet Potatoes peeled and diced
Meat Mixture
  • 1 lb Ground Beef or turkey
  • 1 packet Taco Seasoning
  • 1 cup Black Beans canned, rinsed and drained
  • 1 cup Corn canned or frozen
  • 1 cup Salsa
Toppings
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Sour Cream for serving
  • 1 cup Chopped Green Onions for garnish

Method
 

Prepare the Potatoes
  1. Preheat the oven to 375°F (190°C). Boil the diced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
Cook the Meat Mixture
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add taco seasoning, black beans, corn, and salsa to the skillet. Stir and cook for another 5 minutes.
Assemble the Bake
  1. In a large mixing bowl, combine the cooked potatoes with the meat mixture. Stir until well combined.
  2. Transfer the mixture to a greased baking dish. Top with shredded cheddar cheese.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes. Serve with sour cream and garnish with chopped green onions.
