Ingredients
  

Salad Ingredients
  • 4 cups mixed salad greens
  • 1 cup shredded carrots
  • 1 cup cucumber sliced
  • 1 cup red bell pepper sliced
  • 1/2 cup red cabbage shredded
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup peanuts chopped, for garnish
Peanut Dressing
  • 1/4 cup peanut butter smooth
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 2 tablespoons water to thin the dressing

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed salad greens, shredded carrots, cucumber, red bell pepper, red cabbage, and cilantro.
  2. Toss the salad ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, and minced garlic.
  2. Add water gradually until the dressing reaches your desired consistency.
Combine and Serve
  1. Drizzle the peanut dressing over the salad and toss to coat evenly.
  2. Garnish with chopped peanuts before serving.
