Ingredients
  

Vegetables
  • 2 cups cherry tomatoes halved
  • 1 large cucumber sliced
  • 1 small red onion thinly sliced
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey optional
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Vegetables
  1. In a mixing bowl, combine the halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, and honey (if using). Season with salt and pepper to taste.
Combine and Serve
  1. Pour the dressing over the salad and toss gently to combine. Garnish with chopped parsley and serve immediately.
